Vinegar has long been a staple in Japanese cuisine, not just as a cooking ingredient but as a health tonic. Many Japanese people drink vinegar before meals, believing it can help with everything from digestion to glowing skin.
But is there any truth to these claims, and should you consider adopting this practice?
Ipsita Chakraborty, senior nutritionist at Hungry Koala, tells indianexpress.com, “Drinking vinegar, particularly before meals, is a practice rooted in various cultures, including Japan, where it is believed to offer several health benefits.”
Akshita Reddy, senior nutritionist at Athreya Hospital, adds, “Vinegar, especially apple cider vinegar, contains acetic acid, which has been shown to increase the production of digestive enzymes and stomach acid. This can help break down food more effectively.”
One of the most researched benefits of drinking vinegar before meals is its ability to regulate blood sugar levels, Chakraborty mentions. “Studies have shown that acetic acid can improve insulin sensitivity and reduce blood sugar spikes after meals.”
Drinking vinegar before meals may also help boost metabolism and promote weight loss. Some research suggests that acetic acid can increase fat burning and reduce fat storage, states Chakraborty.
“Vinegar has been linked to improved heart health by helping to lower blood pressure, cholesterol levels, and triglycerides. Acetic acid and antioxidants present in vinegar can help reduce oxidative stress and inflammation, both of which are risk factors for cardiovascular diseases,” notes Chakraborty.

Chakraborty says, “The acetic acid in vinegar helps balance the skin’s pH levels. A balanced pH can improve the skin barrier function, reducing issues like dryness, irritation, and acne. When consumed regularly, the systemic effects of vinegar may also contribute to better skin health from the inside out.”
Vinegar, particularly those derived from fruits like apples, contains antioxidants such as polyphenols. These compounds help neutralise free radicals in the body, which are known to cause cellular damage and accelerate skin ageing.
Reddy echoes this, “Vinegar's antioxidants, such as polyphenols, may help reduce oxidative stress in the body, contributing to healthier skin and a reduction in skin ageing signs. The regulation of gut microbiota through vinegar consumption could also indirectly benefit skin health by reducing systemic inflammation.”
While there are several potential benefits to drinking vinegar regularly, Chakraborty says, there are also some risks and side effects to consider, especially for individuals with specific health conditions:
- Gastrointestinal Issues: Consuming vinegar, especially on an empty stomach, can increase stomach acidity, potentially causing acid reflux, heartburn, or worsening symptoms of gastritis and ulcers.
- Tooth Enamel Erosion: Vinegar is highly acidic, and regular consumption, particularly in undiluted form, can erode tooth enamel over time. This can increase the risk of cavities and tooth sensitivity.
- Potential Drug Interactions: Vinegar may interact with certain medications, including those for diabetes and heart disease. It’s advisable to consult with a healthcare professional if you are on medication.
- Bone Health Concerns: Excessive vinegar consumption can lead to lower potassium levels in the body, which, in turn, can affect bone density and overall bone health.
“Given these potential benefits and risks, it is crucial to consume vinegar in a diluted form, ideally mixed with water, and to consult with a healthcare professional before incorporating it into a daily regimen, especially for those with underlying health conditions,” asserts Reddy.
